Healthy Ground Turkey Greek Bowl Recipe

Ingredients

 Ground Turkey

  • 1 lb lean ground turkey
  • 2 tbsp olive oil
  • 1/2 white onion diced
  • 2 tsp minced garlic
  • 2 tsp oregano
  • 1 tsp basil
  • 1/3 cup sun dried tomatoes in oil

Tzatziki

  • 1 cup plain Greek yogurt
  • 1 lemon juiced
  • 1 tbsp olive oil
  • 2 tsp dill
  • 2 cloves garlic minced
  • 1/2 cup shredded cucumber

Tomato & Cucumber Salad

  • 6 oz grape tomatoes halved or quartered
  • 1 cucumber diced
  • 1/4 cup red onion diced
  • 1/2 cup parsley chopped
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 lemon juiced
  • 1 lemon zest

Quinoa & Brown Rice

  • 2 cups Quick cook quinoa & brown rice

Instructions

Ground Turkey

  1. Heat large skillet with olive oil.

  2. Add the onion and let cook for about a minute or two.

  3. Add the turkey and cook until the turkey is browned , breaking up the turkey into small pieces as it cooks.

  4. Add the garlic, oregano, and basil, and stir well to combine. Add salt and pepper to taste.

  5. Add the sun-dried tomatoes, and stir to combine, cooking for another 2-3 minutes.

Tzatziki

  1. In a bowl, combine the Greek yogurt, lemon juice, olive oil, dill, garlic, and cucumber. Season with salt.

Cucumber Tomato Salad

  1. Combine tomatoes, cucumber, red onion, parsley, lemon zest, lemon juice, olive oil, red wine vinegar and garlic in a bowl. Season with salt and pepper.

Brown Rice & Quinoa

  1. As directed on packaging

Assemble

  1. To your bowl, add quinoa/ brown rice, ground turkey turkey, cucumber tomato salad, and top with tzatziki.
